André CORSIGLIA's sons, master confectioners, have been making marrons glacés in the purest tradition since 1896.
All fruit is of guaranteed origin. We use top-of-the-range products: chestnuts, sugar, glucose, Madagascar Bourbon vanilla pods. We make our Marrons Glacés using a process known as "confisage sous tulle", which involves wrapping the raw chestnuts, two by two, in tulle muslin by hand, to keep the chestnuts whole, obtain a pearl of syrup at the heart of the fruit and preserve the subtle taste of the chestnut.
